I know that eating meat is not a sustainable practice. However, I also know that becoming vegetarian just isn’t possible in this household. That being said, we have been cooking less meat and discovering more vegetarian recipes that are filling and delicious.
When we moved to Egypt, part of our culture shock experience included discovering that the meat was not always trustworthy. Think blue steaks, chicken that went off in a day, and bumping into a giant leg of beef hanging out in a shopping cart in the middle of the store.
Needless to say that my appetite for meat decreased immensely. But that left me with very few meal options.
Thankfully we DID have the internet so here’s what I found:
Sweet Potato Burrito Bowls – Really, sweet potato anything. I love them!
Veggie Hash with Eggs – honestly I don’t think we’ve ever made this recipe as it’s written. The idea is the same though. Cube some veggies, add seasonings and fry an egg to go on top.
Balsamic Caprese Risotto – Beware! Risotto is time consuming, but delicious if you have the time to invest.
Hot and Sour Soup – For those of you who don’t have access to good American-Chinese food and like Hot and Sour soup, I highly recommend this!
Ricotta Gnocchi – or any pasta with simple Italian sauce!
Also if you like Indian food, there are many more options.
